1/2 cup to 1 cup of Egg Whites
1/2 cup Diced Red Pepper
1/2 cup Chopped Asparagus
1/2 cup Spinach
1/4 cup of Feta Cheese
Olive Oil
- Heat olive oil in pan. Add red pepper and asparagus and cook until slightly softened (~5 minutes).
- Mix egg whites, spinach and feta in separate bowl. Add to pan with peppers and asparagus stir eggs until cooked (it will be more like an egg scramble).
- Sprinkle with black pepper and enjoy!
