Ingredients:
2-3 cups of Diced Yams or Sweet Potatoe
1 1/2 lbs. Diced Chicken
1/2 cup Chicken Broth
1 tsp. Cumin
1 tsp. Ginger
1 tsp. Mild Curry
1 tsp. Chili Powder
2 cups Frozen Mixed Vegetables
1 Tbsp. Arrowroot Flour
- Place yams/sweet potatoe in bottom of crock pot. Top with diced chicken.
- Sprinkle spices on top of the chicken. Pour the chicken broth over the chicken.
- Cook on High for 3-4 hours (or low for 6-7 hours)
- Mix in frozen vegetables and arrowroot flour. Stir.
- Cook on High for another 30 minutes until frozen vegetables are cooked.
